Our first new coffee of 2017 is a yellow honey Catuai from the Cerro de Jesus Farm in Nicaragua. With the honey process, once the cherries are picked, sorted and then pulped to remove outer skins the beans are left in a layer of mucilage to maintain sugars and acids. The resulting coffee is bustling with fruit acidity and sweetness - think passion fruit with mango cream!

Cerro de Jesus is located in the municipality of Jalapa, Nueva Segovia. The farm sits on the areas highest mountain and occupies a total of 281 hectares of which 126 is used to grow coffee, the rest left as forest. High levels of annual rainfall produce a diverse range of vegetation and wildlife. The farm provides schooling and meals for the children of the 300 workers from the El Escambray community.

This particular coffee comes from the Don David plot which covers a small area of 5 ‘Manzanas’ equal to approximately 3.5 hectares
