Sierra Azul is a small close-knit community of coffee growers cultivating small farms in the dense, beautiful rainforest of Chiapas, Mexico. The producers manage the harvesting and processing of mainly Typica and Bourbon beans themselves, with a focus on following guidelines to minimize the impact of coffee on the ecosystem. This selection has all the hallmarks of classic Mexican coffee showcasing a popular and accessible flavour profile. Artisan Roast have given the coffee a fuller roast to enhance it’s cocoa-like characteristics which work harmoniously with roasted almond, orange citrus, vanilla, dark molasses and even notes of cedar which deepen the complexity.

Sierra Azul is a small close-knit community of coffee growers in the dense, beautiful rainforest of Chiapas, Mexico. The farms all lie in the El Triunfo Biosphere Reserve buffer zone and as such the producers are focused on following guidelines to minimize the impact of coffee on the ecosystem.

 

The farms are small in size, often managing their harvesting and processing themselves before bringing dried parchment together. Across these smallholdings the group grow a range of cultivars, most commonly the two that formed the basis of early Latin American cultivation, Typica and Bourbon.

 

This selection from Sierra Azul has all the hallmarks of classic Mexican coffee and showcases the moreish accessible flavour profile that makes it such a popular origin in North America. We’ve given the coffee a fuller roast to best enhance the cocoa like characteristics. These rich milk chocolate flavours work harmoniously with roasted almond and orange citrus like flavours. Further dessert like flavours of vanilla and dark molasses work with notes of cedar to deepen the complexity.
