From Nino @ Casa Espresso:

This small lot of coffee produced just 20 bags, of which we were very lucky to get our hands on a bag. We found this coffee to have sweet and juicy notes of berry compote, with a delicious syrupy body and a crisp finish. A well rounded but complex acidity makes this an interesting cup.

Location & Farmer - Owner David Rubanzangabo grows this red bourbon varietal of coffee at 1600-2300 metres above sea level on the Huye Mountain estate, in the Huye district of Southern Rwanda. Recently been made famous in Stumptown Coffee Roasters’ film – ‘A Film about Coffee’

The Processing - This coffee is wet processed. Aka washed. In this process the ripe coffee cherries are picked and sorted for unripe/defects, then pulped to remove most of the fruit surrounding the bean, and soaked in large fermentation tanks to remove the remaining fruit pulp. It is then drained and dried on raised beds to around 10% moisture content.
