Specific attention is paid to soil analysis and balance as well as coffee tree renewal and weeding.In addition to the family the farm employs one additional permenant worker and four part-timers.
Harvesting can take up to twenty days where detailed quality control procedures ensure only the mature ripe cherries are selected during any one pass. Processing, starting with fermentation in water tanks, commences within six hours of picking. Once through the processing and sorting stages the coffee is dried in greenhouses.
