Last year we had our first ever coffee from Colombia which came from this same farm. It was astounding last year and this fresh crop is possibly even better!
Manual and rigorous picking ensures adequate ripeness for the depulping process, which is done without water. Coffee is stirred and tested to determine the ideal fermentation based on the cup profile wanted. Fermentation time for this coffee ranges between 17 and 20 hours. Once fully washed, the coffee is mechanically dried. The temperature is closely monitored and ranges between 35°C (95°F) and 45°C (113°F).
Las Margaritas is part of a group called Granja La Esperanza, made up of small sub farms allowing complete traceability. They employ 23 people on a full time basis and this increases to 150 at the busiest harvest times during the year. A school enrolment program is available for the children of the workers. The farm is planted with a wide array of varietals but this lot is made up exclusively of Red Bourbon. This is the same tree type that has been extensively planted in Rwanda and is known for its superb cup quality. Unfortunately these trees tend to have a fairly low yield making them less profitable in terms of harvest volume, but the high cupping scores tend to mean that these lots fetch higher prices.
The trees of Granja La Esperanza farms are looked after by their expert agronomists and the processing has been carried out with the utmost attention to detail resulting in a truly exceptional coffee.
