Bergamont - Elderflower - Caramel. The Knots Family Yirgacheffe has been a Climpson's favourite the last couple of seasons - so we bought some more again this year.
Ethiopian Yirgacheffe is one of the classic and most sought after coffees in the world. What is so interesting about it is that one coffee can be quite different from the next. This is because it is a mixed heirloom variety – meaning the coffee is a mix of naturally occurring, well adapted coffee strains grown in the Yirgacheffe region, and which result in a varied outcome in the cup.

The Knots Family Farm washing station is located about 50 kilometers from Yirgacheffe town, in the Gedebe region of Ethiopia. All producers are family members that live in the area, each with approximately two hectares of land and average 3000 trees.

The washing station is located in a valley, creating a unique microclimate to grow coffee. All of the picked cherries are processed at the Knot's Family station. Before pulping there is a selection procedure to ensure that only the red cherries will be processed.
