"Our Seasonal Espresso, Summer V2, comes from the farm that neighbours Finca San Francisco, a farm that we sourced our previous summer espresso this year, the Cerro Las Ranas. As with the Cerro Las Ranas, this coffee is also processed at Las Cruces Mill and once again sits perfectly with our sourcing philosophy for our seasonal espresso. We do this by returning to producers and farms in order to continue these growing relationships at origin.
El Molinito coffee comes from the El Molino farm. A small part of El Molino, the brand El Molinito was chosen to be a highly selective coffee from the most productive bourbon and pacas trees on the farm. It was the JASAL group in El Salvador who started the El Molinito project. By paying close attention to a very selective harvest of homogenous ripe cherries from the farm, which in turn allows JASAL to offer this fantastic coffee.
The focus on selective picking has become a big part of the company’s culture and success. A lot of time and effort goes into training and educating pickers on the most efficient ways to select the ripened cherries. JASAL emphasises the fact that top quality coffee comes from the farm itself in addition to the way the cherries are treated, picked and processed."
