The Fields is perhaps the cornerstone of our forward thinking approach at Climpson & Sons and our position as an innovator within the London coffee scene. It gives us the opportunity to showcase exciting and expressive advancements from farm to cup, be it through new hulling/processing/drying methods, variety genealogy, agronomical experimentation, or simply political and social changes.

In this case we are super excited to introduce one of our first ever Ecuadorian coffees as the Fields version 19! Producer Rosa Abad one of the few female coffee farmers working in a particularly male dominated industry.

Rosa has had lifelong coffee experience and won numerous awards for her micro-lots. Ecuador is still a developing origin in regards to coffee growing with exportation difficult due to the inaccessible coffee growing region. This is why we are so proud to present such a mind-blowing coffee, and without a doubt one of the best specialty coffees coming out of Ecuador right now.

Farm Information:

Rosa’s organic farm is situated at an idyllic spot on the mountain range Rancho Carmen, 1710 meters above sea level. She grows red and yellow caturra, pacas and typica and the coffee plants carry colourful coffee cherries due to their slow ripening process. The farm stretches into a deep valley with platano and fruit trees providing natural shade for the coffee plants.

The coffee is depulped at the farm and then sun-dried on covered raised beds at her son’s farm five minutes’ drive away. The drying process takes 15 or more days depending on the weather.

Brew

This coffee blew us away on the cupping table for its rich and lively flavours. With a heavy, creamy body you’ll find notes of sweet yellow fruits next to chocolate and caramel. It’s a clean, dynamic and multi-layered coffee that works beautifully as both an espresso or filter style brew.
