Our latest washed Ethiopian comes from the Worka Cooperative located in the Yirgacheffe region of Southern Ethiopia. This coffee is the summer’s last hurrah, at its best. Clean and effervescent, this complex coffee tastes like everything from cherry cola to jasmine tea.

The Worka cooperative is formed of 310 farmers that contribute cherries to the central washing station. These neighbouring farmers have only a small area of land each and lack the infrastructure to individually process their small output. In working together their collective output and quality is much greater, also resulting in better price.

The Yirgacheffee region has almost always been synonymous with intensely floral and elegant cup profiles. The local heirloom varieties are descendant from native Typica found in the surrounding forests and the washed processing here is so rigorously controlled that the intensity and clarity of flavour is certainly no surprise. All cherries are hand picked and hand sorted before being mechanically pulped and de-mucilaged at the Worka Cooperative wet mill. The coffee, still in its parchment form, is then soaked in washing channels for 24-36 hours to further remove mucilage and grade by density. From here the coffee is moved to raised beds and dried for 10-15 days.

With this controlled washing process it is no surprise that coffees from Yirgacheffe often set the standard for clean, delicate and complex cup profiles. Peach, Grapefruit and Chamomile tea were just the start of the many pages of tasting notes our staff and customers came up with recently.
