From Nino @ Casa Espresso:

This coffee is dynamic in flavour- there are dominant notes of apricot, marzipan and floral tones. Unusually for washed Ethiopian coffees, this coffee has big bold body- making it excellent in espresso as well as filter.

Location & Farmer - This family-owned estate is situated in the highlands of the Kaffa region. The coffee is wild and natural, consisting of heirloom varietals. It is grown in an area of some 2,000 hectares at an altitude of between 1,750 and 1,850 metres above sea level and is certified Rainforest Alliance and Organic. This estate provides permanent employment for four hundred people and during the harvest this figure will rise to between two and three thousand.

Process - The coffee cherries are hand-picked and processed on the estate. The cherries are sorted, pulped and then soaked in fermentation tanks to remove the flesh of the fruit. The coffee is then dried on raised beds, then transported to Addis Ababa for dry milling.
