This coffee is grown by the Ferrero family at the Cerrado in Minas Gerais at 1,150 metres above sea level. The varietal is yellow Bourbon and is natural process.
The Processing
The ripe cherries machine picked and the densest cherries are selected, due to the high sugar content which makes them ideal for natural processing. The cherries are pulped then dried. The coffee is then dry milled and sorted for defects and packaged up.
