Hidden away in the far south of Costa Rica many many miles from the more recognisable regions of Tarrazu, Tres Rios and the Western valley lies a micro region in Bruncas producing some exquisite coffees. This small cluster of farms nestled around 1750m above sea level to the north of Volcan Baru are less than twenty five miles from the Boquete region of Panama so synonymous with exemplary geisha production and owe more in terroir to their Panamanian neighbours than their Costa Rican peers.
The Juruntungo farm run by Mauricio Barrantes of the Lilas micro-mill is one of these farms. Only 1 hectare of the 25 on the farm is planted with geisha under shade of banana and inga and the resulting crop is tiny. This exclusive coffee to Artisan Roast comes from this small parcel and has many of the characteristics expected of high quality Central American geishas. It also has a flavour profile defined by the ingenuity and technical know-how of Costa Rican honey processing.

This geisha is a gold honey where all of the mucilage of the fruit is retained and the patio drying environment carefully controlled in a parabolic drier to retain unique characteristics of the farm while at the same time enhancing the sweetness and mouthfeel of the coffee.

In terms of the espresso cup profile the honey processing has muted the intensity of acids and it is very much a coffee led by a viscous syrupy sweetness with a citrus to white grape acidity and low bitterness. The underlying quality and complexity of the acidity is retained, especially the tartaric acidity and this adds enough structure to the espresso without being overpowering. The flavour profile which is rich in sweet fruit and sugar like aromas. We find peach and mandarin orange along with redcurrant are most noticeable as an espresso with an underlying dense caramel flavour running through the coffee.

As a cappuccino the caramel flavours become more dominant and the citrus notes become lemon like supported by hints of persimmon.
