Environmentally sound and sustainable farming practices such as water conservation, natural composting and the use native shade trees are of paramount importance to Dario. Hunting on the farm is prohibited and waste water from processing is treated before returning to the water course.Coffee at El Nogal is entirely hand harvested and sorted. The farm has its own wet mill and processing plant after which the coffee is dried on the house roof.
Historically coffee from this farm has joined others in a local cooperative however this is the first time Dario has offered coffee to the speciality market solely under his own farm name, and grateful we are too.
I roast this coffee to a lighter degree than I do pulped naturals to accentuate the fruity notes. I also push it a little harder in the early stages since the beans are very hard and dense due to the altitude they are grown at.
