This coffee from the Shakisso farm grows in Oromia, one of Ethiopia’s largest regions. It consists of mixed heirloom varieties, is fully washed and is Organic Rainforest Alliance certified. Shakisso is located in the Guji zone in the south of Oromia that borders the Sidamo and Gedeo zones. The farm started to produce organic coffees in 2001 and works closely with medium-sized outgrowers who are specialized in this highland forest coffee. Interestingly, there are many gold mines in the area, so the coffee fields are literally full of holes where people have been digging for gold. This makes walking between the coffee trees risky!

This coffee has been decaffeinated using the CO2 process. This method was developed by the scientist Kurt Zosel of the Max Plank institute and uses liquid CO2 in place of chemical solvents. Water soaked coffee beans are placed in a stainless steel container called the extraction vessel. The extractor is then sealed and liquid CO2 is forced into the coffee at pressures of 1,000 pounds per square inch to extract the caffeine. The CO2 acts as the solvent to dissolve and draw the caffeine from the coffee beans.
