From Horsham Coffee Roaster:

Finca Los Olivos is owned by Floralba Apio. Her farm is just 3.8 hectares in size and she grows a mix of Caturra and Castillo trees. The coffee is hand harvested and only ripe cherry is selected for processing. After harvesting the coffee is left in sacks for a few hours before it is pulped. After pulping the coffee is fermented for about 26 hrs. This long fermentation period has worked very well with her coffee and creates a unique bright but sweet profile. After fermentation the coffee is washed and laid out to dry on raised beds.

Colombia produces some incredible coffees often showcasing acidity similar to the best coffees from Kenya. This is a great example of a bright, juicy, sweet Colombia coffee. You can expect complex fruit notes that include red grape and golden raisin. Fantastic as a filter coffee or a bright, juicy espresso.

Brewing

This coffee works well with all filter brewers and espresso. For filter we recommend a 1 - 16 brew ratio, and for espresso a 1 - 2.2 brew ratio.
