From Horsham Coffee:

This coffee comes from a single small hold farm owned by the Elver Paya Guaicue family. The farm is organic certified and covers just 6.3 hectares. They grown only Caturra trees and all coffee is hand harvested. After harvesting the ripe cherry is pulped at the farm and fermented for 32 hrs to break down the fruit that remains after pulping. The coffee is then washed and sun dried until the moisture reaches 11%. This is an outstanding microlot that demonstrates amazing clarity that is only found in the best Colombian coffees.

We discovered this amazing coffee through our friend John at The Green Collection. He's helping to bring outstanding organic Colombian coffees to the UK from his friends farms located in the mountains of Tolima.

Brewing

This coffee works well with all filter brewers and espresso. For filter we recommend a 1 - 16 brew ratio, and for espresso a 1 - 2.5 brew ratio.
