We are pretty excited to have discovered the Finca San Francisco coffee from El Slavador. Paired with one of our all time favourite coffees the Knots Family Farm from Ethiopia creates a mouthwatering espresso with toffee sweetness, notes of golden raisin, stone fruits, blueberry and a little bit of citrus.

The San Francisco Farm, one of the most significant estates of the JASAL group, is home not only to a coffee producing region, but also to a natural forest reserve which was donated to the National Forest Association of El Salvador with the purpose to preserve a beautiful habitat to many exotic plant and animal species. At the highest part of this reserve lies a one of a kind lagoon home to thousands of frogs that depending on the time of the year, you can see them jumping all at once in this lagoon.These frogs have not only become a part of the farm itself, but part of the JASAL group and family, symbolizing a culture of environmental help and preservation.

Cerro Las Ranas is one of the specialty coffees that come from the San Francisco Farm that symbolizes these frogs, which means ‘Ranas’ in Spanish, and the brand is recognized for its semi washed process and specific chocolate notes that arise from the method and the mucilage left on the coffee bean before it dries on the patios.

The Knots Family Yirgacheffe has been a Climpson's favourite the last couple of seasons - so we bought some more again this year. Ethiopian Yirgacheffe is one of the classic and most sought after coffees in the world. What is so interesting about it is that one coffee can be quite different from the next. This is because it is a mixed heirloom variety – meaning the coffee is a mix of naturally occurring, well adapted coffee strains grown in the Yirgacheffe region, and which result in a varied outcome in the cup.

The Knots Family Farm washing station is located about 50 kilometres from Yirgacheffe town, in the Gedebe region of Ethiopia. All producers are family members that live in the area, each with approximately two hectares of land and average 3000 trees.

The washing station is located in a valley, creating a unique microclimate to grow coffee. All of the picked cherries are processed at the Knot's Family station. Before pulping there is a selection procedure to ensure that only the red cherries will be processed.
