Notes of cocoa and raisins dominate this cup. Coupled with bags of body and a thick, syrupy mouthfeel this coffee works excellently as espresso

From Nino @ Casa Espresso:

This coffee is grown by the Naimeg family at the Cerrado in Minas Gerais at 1,160 metres above sea level. The varietal is yellow Catuai and is natural process.

The ripe cherries machine picked and the densest cherries are selected, due to the high sugar content which makes them ideal for natural processing. The cherries are then dried on raised tables for 8-10 days depending on weather. The coffee is then dry milled and sorted for defects and packaged up.
