This particular lot is limited to a few hundred kilos and the coffee is ‘red honey’ processed. This means that 100% of the mucilage is retained during the drying process, which in this case took 14 days. The result is something that ends up tasting like something between a natural and a washed coffee. In the cup, this bean is all about the black treacle and molasses and an incredibly silky mouthfeel. It’s well balanced and has good complexity whilst somehow managing to be an unusual hybrid of fairly traditional and yet pretty funky at the same time!
