Foundry Coffee Roasters - Arcangel - Bolivia - Natural

The last time we bought coffee from Bolivia, this farm didn’t even grow coffee! - which makes what they have managed to achieve here since first planting coffee in 2015 truly remarkable.

This beautiful farm is surrounded by forest and these native trees are used as shade plants for the coffee. A very humid climate means that the farmers have to work extra hard to produce their coffee, with a lot of effort going into the drying process in particular.

Despite all this, the farm has produced what can only be described as truly wonderful coffee. In the cup, you can expect a really clean coffee. The processing has been judged perfectly so that the flavours often associated with natural processing don’t dominate. What you have here is an absolute fruit bomb! It reminds us of parma violets and there are strawberry notes too. The whole experience is finished off with a wonderfully sweet, lingering chocolate finish.

This coffee has got us all really excited and we know that you’re going to absolutely love it too.

In espresso, we pull 36g from a 18g dose in around 38 seconds, which includes a 6 second pre-infusion on the spring lever machine. We were using a 18g VST basket and flat burrs.

For Aeropress we use a 15g dose. In a V60, an 11g dose and a slightly finer grind really brought out the violet notes.
