Finca Bendicion is owned by Ismael Recinos who won second place in 2015 El Salvador Cup Of Excellence and we are proud of have secured just 1 bag of this lot. Ismael takes good care of his farm, putting his passion for coffee production first in everything he does.

This pacas lot is honey processed which starts by selective hand picking of only ripest cherries. Coffee is depulped the same day as being harvested and moved to beds to start with the drying process. The drying process takes anything between 17 & 20 days.

The region of Chalatenango located just to the north east of the capital San Salvador is far less well known as a growing region compared to the likes of the famed Santa Ana and Cordillera Tecapa Chinameca regions. Chalatenango benefits from a cooler climate than Santa Ana which lends itself well towards the growing & production of the pacamara varietal.

Most of the producers in Chalatenango (as with much of El Savladorian producers) don’t own their own mills and it can be a difficult area to access and get coffee out of also. The coffee is transported from the farms to the local dry mill via mule rather than truck and unlike much of the trade that happens in El Salvador where you buy from the exporters – the coffees produced out of this area are generally traded directly between grower and importer. In this case, the coffee has come to us via our friends at Cafe Imports but we’ve only got 60 kilos so be quick!

When do we roast and post your coffee?

We roast 5 days a week on our Diedrich IR-12 & CR-25. We roast and rest our EQ & E1 espressos only to a maximum of 10 days so these coffees will arrive ready to use. All other single origins are roasted to order on the next available roast day & sent out within 24 hours.

We recommend a minimum of 10 days rest past roast day on all our espressos and a minimum of 2-5 days rest on all filter coffees.

TO ENSURE SAME DAY ROASTING, ALL ORDERS MUST BE RECEIVED BY 11am. ANY ORDERS RECEIVED AFTER 11am WILL BE ROASTED THE FOLLOWING ROAST DAY.

All UK deliveries will be charged at a flat rate of £2.75 and sent via Royal Mail 24 service.
