From Weanie Beans:

Hailing from La Nueva Era, an agricultural co-operative on the slopes of Volcan Jumaytepeque in the Fraijanes region of Guatemala, this is a natural coffee, something which is still pretty unique in Guatemala, where coffees are typically always washed.

The farmers pick and dry their coffee before being collected, stored and prepared for export by the dry mill owned by the co-operative.

The farmers all work to get the coffee to a stable moisture content, and that means that the drying times get slightly longer (up to 15 days) at each increase in altitude. It makes for a more consistent green coffee.
