This works really well as a single estate espresso at this new roast profile. It has the intensity to make a long drink delivering sweet notes of apple and chocolate. Try 18.5g, 32 second pour, 33ml beverage plus creme. Delicious. Not as dark as previous incarnations of the Black Bag.

This family run farm has been producing coffee since 1870. The current owners are fourth generation farmers and have run the estate for the past twelve years.

The farm lies at around 1450m in the windswept Apaneca Ilamatepec mountains. The coffee trees, all bourbon varietal, are protected from the elements by extensive native 'mother' trees which also support a large indigenous bird population. The current owners are committed to protecting the native environment and the bird population which in turn protect the coffee trees from otherwise harmful pests. The have also built up a vast collection of earthworms that are used to produce organic fertiliser made from the by products of coffee processing.

All coffee is hand picked and hand sorted. It is then processed on the family's wet mill that also serves neighbouring farms.Work on the 27 hectare farm at its peak provides employment for some 24 local families.
