Atauwauka coffee company buy parchment coffee (wet processed and sundried but sill with a skin on the bean) from parchment collectors who in turn gather coffee from the local smallholders in the Unggai region. Few farms are larger than 10 hectares but almost all producers undertake the initial wet processing and sun drying with their own equipment. Once the parchment is collected by Atauwauka it is once again sorted and sun dried to ensure uniformity and hence improve quality. Once at the desired 11% moisture the parchment layer is removed and the green beans are stored in sacks.
The green beans are exported through Monpi Coffee Exports who also undertake grading and sorting as a final quality check prior to export.
