Full on blackcurrant and stewed fruits, grape acidity and high sweetness

Most of the smallholders forming the Rumukia Co-operative have less than a hectare of the rich red volcanic soil in the foothils of Mt Kenya from which to produce coffee. Once hand picked and hand sorted to ensure only the ripest cherries are selected the coffee is processed by the Tambaya factory near the town of Karatina.

At the factory the coffee is again hand sorted, pulped to remove the outer layers and then fermented in water to break down the mucilage. After fermentation the coffee is washed and dried on raised beds. The beans are repeatedly moved to ensure even drying and again hand sorted to remove any damaged beans.

The co-operative has gained Fairtrade certification and regularly runs training courses on best practice for its members. The Society also offers credit services for education to its members as well as medical services.

These beans are graded AA which in Kenya are an indication of size and not cup quality.

I like this coffee best using immersion brewing but it is also suited to pour over and Aeropress.
