Rounton Coffee Roasters: Colombia, Luz Mila Chasoy, Honey Process

Luz Mila Chasoy manages Bella Vista farm, in Nariño, Southern Colombia. With the help of her family, they actually manage 3 farms in total, where they have recently taken the decision to process all their coffees with the honey method. This particular lot is a mixture of Colombia and Caturra varietals, grown at 2,090 MASL. The well-controlled processing and altitude at which this coffee is grown have lead to a cup profile which we are incredibly excited about - notes of strawberry and lime are prominent, with a buttery body.

Doña Luz lives in the Municipality of Tablón de Gomez. However, her identity lies with the indigenous community of which she is a part, which is the Inga. Her family hails from the towns of Aponte and Paramo, deep in the Juanambú canyon. This group belonged to the northernmost part of the Inca Empire, who colonized the south of Colombia in the late XIV century, a bit before the Spanish came. Land here is communal and its population is ruled by a “cabildo”, a group of elders that make sure that their ancestral laws and traditions are upheld.
