After delivery water floatation is first used to separate the ripe from under ripe cherries before the pulped is removed from the cherries. After this the coffee is fermented in water tanks to break down the remaining pulped. Once the fermentation process is completed, the beans enter the washing channels where floaters are separated further and the dense beans are cleaned of mucilage and are washed once again.
Once the washing is complete they are then laid on raised drying tables that allow full air circulation to ensure even drying. While the beans dry they are hand sorted many times to ensure defects are removed. Once the target moisture content has been reached the coffee is bagged and stored until it is ready to be prepared at the dry mill.
This is an AB lot meaning the bean size is one step down from the largest AA grade. This isn’t a grade of cup quality but rather a grade of bean size. We’ve found that quite often AB grades can perform better in the cup and quality cannot be judged on bean size along!
