The natural processed yellow bourbon is carefully hand-picked and sorted to ensure only the good ripe cherries are selected before being dried on raised beds. The cherries are hand turned for up to 12 days before being milled, sorted and packed for export. The result is a funkier and more full-bodied flavour with hints of hazelnuts and tropical fruits with heavy chocolate on the finish.
We roast this a little darker than we would with some of our brighter, fruitier coffees (about mid way between the end of 1st crack the start of 2nd). This brings out lots of body and chocolate notes with a muted acidity and some nice caramel and stone fruit sweetness. This coffee is ideal for drinkers who like to put milk into a filter or for milk based espresso drinks. If you aren't a fan of bright African coffees then this will suit you well.
