The Carrasco la Reserve is located in the La Paz region of Western Bolivia, high in the mountains, and is sometimes referred to as 'the door to the amazon.' Coffee from this region is grown using organic methods, and our Carrasco coffee is Organic Certified. Citrus and Banana are grown alongside the coffee trees and provide shade for them as well as enriching the soil with extra nutrients.

Each berry is picked by hand to ensure maximum ripeness, and each plant receives multiple passes over the months-long harvest, which also contributes to processing only perfectly ripe cherries. Once the cherries reach the wet mill, the skin is removed by a mechanical pulper before removing some of the mucilage and starting the fermentation process. As the Carrasco is a semi-washed or white honey processed coffee, 5% of the mucilage is retained during the de-mucilaging process. The coffee is fermented under water for 15 hours, before being transferred to raised drying beds where it is continually turned by hand to ensure consistent drying and to avoid any over fermentation.
