This northern Sumatran coffee comes from the Megah Berseri co-operative and is produced by small holders with farms of 1 to 2 hectares each. Most of the coffee is picked and hand-sorted by Gayo and Javanese women as they work together under shade covering.
The coffee is processed in a manner called "wet-hulled" or "semi-washed," which involves depulping on a farm after picking, then overnight-fermentation in tanks, sacks, or other containers in order to soften the mucilage layer, which is then washed off. This process contributes to the herbaceous, spicy, earthy characteristics of the coffee, and reduces the brightness and acidity.
