La Esperanza is a coffee farm near San Juan de la China, Colombia and is run by Jhon Leguizamon who inherited it from his father 12 years ago.
The farm is situated on a steep north-facing hill, with nearly half of the farm in forest, within which there is a spring that provides water for drinking and washing the coffee.
After the coffee cherries are harvested by hand, they are sorted by density, pulped, sorted by density again and then after 24 hour fermentation, washed two to three times depending on the variety. A two stage, covered drying system is utilized to preserve the fine acids and sugars of this exceptional coffee.
