Emphasis on farm-to-roaster relationships ensures we see the best quality, seasonal coffees coming from the same farms every year.
Farm Story
This is the third year we have purchased coffee via Oscar and Francesca Chacon of Las Lajas Micromill. Their commitment to quality, innovation and preservation of their environmental impact are evident with the exceptional results of their natural processed coffees year after year.
Las Lajas is an organic micromill located in Sabanilla de Alajuela in the Central Valley region of Costa Rica. Organic coffee in Costa Rica is almost non-existent, and with this calibre of cup quality, Las Lajas is almost one of a kind. Las Lajas processes coffee from their family farms’ ensuring harvesting and processing are overseen with great care. Lots are fully traceable and separated by day, using a Brix meter to determine optimal ripeness for picking.
As average temperatures rise and the weather patterns change, the Chacons are considering adding more shade trees to their farm to moderate the heat, and to add irrigation systems to combat the inconsistent rainy seasons Costa Rica has had the past few years. To mitigate their water usage, Don Oscar uses a Penagos demucilaginator to depulp his coffee, and since the majority of their coffees are natural or honey processed, very little water is used at the mill.
This specific lot is a more traditional natural process that Las Lajas have donated as their Alma Negra method. With only perfectly ripe cherries sorted and selected the coffee is pulped before being evenly sun-dried on patios.
