The El Martillo farm is located in the region of Santa Ana, known primarily for its sweet, delicate and quintessentially El Salvadorian coffees. Here the soil, weather conditions, varietals and altitude all contribute to the unique and delightful qualities of this bean. Our Head Roaster, Simon Clark visited this farm only a couple of months ago on his origin trip to El Salvador and spent a week cupping through this year’s harvest with producers, Jose Antonio and Andres Salaverria of the JASAL group. From a blind cupping of 50 different lots Simon picked the El Martillo Washed/Soaked lot, which stood out for its sweetness and clarity in particular. Climpsons has been fortunate enough to receive coffees from Jose Antonio in previous years, and it was a great experience for us to visit the farm directly to further develop our relationship with him into the future.

Set in the mountain range of Apaneca Ilamatepec, the sprawling Finca San Francisco complex is divided by various hills ('cerros') or tables/blocks ('tablónes'), and at 1650 metres above sea level, Tablon El Martillo is one of the highest points on the farm. During harvest season, only ripe cherries are picked and taken down to the Las Cruces mill. Here they are pulped and washed before then being soaked overnight in clean water and rinsed again the next day. These are then dried slowly on the surrounding patios for almost 2 weeks. The process is more involved than their basic washed method but also yields a much brighter and cleaner cup profile.
