These past two years especially, with the introduction of our Loring, increased focus on coffee profiling, brewing, quality and education we are sending out coffee that is the best the company has ever produced. We are also in a better position to enhance the difference we are making to producers along the way.
In our constant exploration into the possibilities of flavour, our intention to change our signature espresso, the Climpson Estate has been carefully planned. The new blend continues the pursuit for quality and versatility, as we continue to add depth of flavour to the cup profile. We have considered our driving philosophies: quality, innovation, sustainability, seasonality, traceability and ethical awareness; and it has been our standpoint since the roastery's conception to maintain these attitudes at the heart of our production moving forward.
Climpson Estate 2016: Excellence Re-iterated
We continue our on-going relationship with the Sasaba Washing Station in Ethiopia as the coffees produced there are long lasting and of a consistently high standard. To pair with the Sidamo, and after months spent cupping, profiling, research and development we have decided to work with San Juan Cooperative in Colombia. A project in which we've witnessed the sustainable practices and community-focus first-hand, producing exceptional coffees whilst supporting a community of farmers in the Risaralda region
The Climpson Estate is a standout blend with espresso and milk drinkers in mind. This combination of coffees adds to a deeper espresso profile, creating layers of complexity, body and flavour. Both coffees have a medium acidity, chocolaty sweetness and the fruitiness allows the coffees to contrast and complement each other. The Estate has an undeniably smooth, buttery and creamy mouth feel with orange marmalade, milk chocolate and butterscotch notes.
