Huehuetenango is an impossibly beautiful region in Guatemala, with dramatic, lush, mountainous valleys that roll on and on into the distance. Delving deeper beyond the beauty into the micro regions of the Huehuetenango the different climates and geology play central roles in forming uniqueness in flavour profile from producer to producer. In the district of Democracia the climate is drier than neighbouring valleys and the combination of warm days and cool night make for fresh fragrant and bright fruit driven flavour profiles.

This micro-regional profile is exemplified by Santa Rosa Buenos Aires, and we are very happy to bring you this Typica selection from the farm. It's a large farm run by the Alfaro family, and they work well in separating varieties and qualities through the season to produce interesting and unique micro-lots. Each variety is gown on a named block on the farm, with this Typica coming from the Buena Esperanza part of the farm which sits at 1700 to 1800 metres above sea level. Their quality management has been recognised in the Cup of Excellence competition and the farm has placed in the top fifteen winning farms three times since 2012. Nights are cold in winter on the farm and temperatures in the higher parts of the farm plunge to near zero, testing the Arabica plants and slowing the ripening phase of the coffee cherries.

Their Typica selection is very representative of the subtle, delicate and structurally balanced quality this low yielding variety can deliver. The mouthfeel is delicate and creamy which works in harmony with a medium intensity and complex acidity. We’ve kept this coffee light and bright in the roast to bring out the very best of the famed Huehuetenango acidity profile. Harmonious flavours of toffee and redcurrant along with a mandarin like citrus acidity come through on all brew methods. There is an underlying creamy mouthfeel which is most noticeable brewing on aeropress while on filter the more clean and fruit driven aspects of the coffee are more present.
