From Artisan Roast:

Finca don Jaime is small eight hectare farm owned and run by producer Jaime Guevara in the Chalatenango district of Alotepec-Metapán in El Salvador. This high altitude region is known for producing some of the country's most exceptional, often award winning coffees. The farm has four varieties and this micro-lot is a washed Pacas, a variety born in the nearby Apaneca-Ilamatepeque region.

The farm is focused very much on quality and Jamie has installed raised drying beds, more typical of those found in East Africa to better control the drying phase after fermentation of his coffee. When controlled well this type of drying allows for the coffee to be cured at lower temperatures compared to the more traditional concrete patio method. This helps retain sweetness an attribute very present in this micro-lot.

This limited release honey process pacamara is a partner coffee to Jaime's pacas microlot recently on our website. The tropical fruit flavours are more noticeable in this cultivar which thrives in it's El Salvadorean homeland, and the mouthfeel becomes more viscous. We've roasted it to focus on these attributes and the high sweetness of the honey process supports the more intense complex acidity that has a red apple like quality and persistence. Other flavours to look for are milk chocolate, galia melon and sweet papaya.
