Ecuador is a changing coffee producing nation and this coffee from Fausto Miguel Romo’s Finca Carolina showcases much of this. Traditionally coffee has been focused in the lowland west and highland south, but recent years have seen small farmers moving away from traditional crops and exploring coffee production. These farmers continued to use traditional cultivars, often based around old Typica plants. Here in lies the basis of the quality potential in Ecuador along with the added bonus that Typica has yielded the country a spontaneous mutation, classified as Sidra.

Finca Carolina is a new and small coffee farm in the northern region of Pichincha and Sidra is one of three cultivars grown on the farm. As a spontaneous mutation of Typica, Sidra displays many of it’s varietal characteristics when brewed. This is a subtle and elegant coffee with integrated characteristics to take time over. A medium intensity orange citrus acidity forms the basis on which further flavours of redcurrant, stewed fruit and caramel

This is a delicious coffee for aeropress, where the stewed fruit - almost rhubarb like - and caramel characteristics come to the fore. The acidity is lower in intensity with the aeropress while a silky and luxurious mouthfeel is more present. This flavour profile changes on a filter brew where the clarity of Finca Carolina allows the bright, crisp citrus notes and redcurrant fruit to be more dominant.
