From Artisan Roast:

Fazenda Colina lies in the coffee heartlands of Sul de Minas in Brazil. While many parts of the area are characterised by rolling hills and medium altitude, this farm sits amongst a raised hilly outcrop, pushing the altitude around 300m higher than the surroundings. The higher elevation of the farm creates a unique harvesting period compared to many neighbouring farms. This particular micro-lot is a late harvest selection from the higher parts of the farm. These coffee cherries ripened last, and this has helped preserve the freshness of the green coffee to this point in Brazil’s crop year. Because it’s a final selection through the farm it unusually includes all five cultivars grown on the farm rather than being a selection from one particular area.

Hudson Salvador Vilela uses a combination of patio drying and controlled machine drying to finish the coffee. This is a technique somewhat peculiar to Brazil and when managed well can deliver higher consistency than sun drying. The late harvest is a time when the rains appear so his careful use of machine drying helps manage the processing during the drying time.

The coffee has all the characteristics of a great natural processed Brazil. Its upfront flavours of caramel, milk chocolate and yellow fruit along with underlying vanilla sit harmoniously together. Sweetness dominates the taste balance and a low intensity but complex acidity provides structure through to the finish. The mouthfeel is dense and creamy, accentuating the milk chocolate like flavours in the coffee.

Fazenda Colina is an accessible and versatile coffee for home coffee brewing. We've roasted it with aeropress and single-origin espresso in mind - both these brew methods will bring out the caramel and yellow fruit aspects of the coffee.

Roasting and delivery information

We roast every Monday and Wednesday (roasting days). Our cut off for planning orders for roasting is 12 pm on a roasting date. If an order is received after this cut off it will be prioritised on the next roasting day. Most items will be dispatched the next day (Tuesday and Thursday) We send the coffee by Royal Mail 1st Class post, which aims to deliver within 1 working day. For International delivery to Europe we use the Royal Mail International Standard service. This has a delivery aim of 5-10 days. For International delivery to World Zone 1 & 2 countries we use the Royal Mail International Tracked & Signed service. This has a delivery aim of 5-10 days.
