From Clifton Coffee Roasters:

Rich volcanic soil, low humidity, sunny days and cool nights characterise the Antigua Coffee region. This valley is surrounded by three volcanoes; Agua, Fuego and Acatenango. Volcanic pumics in the sol retains moisture which helps ofset the lack of rain fall. During harvest the coffee cherries are hand picked and then sun dried on patios for 15-20 days depending on temperature & rainfall. The cofee is then rested in jute, before being preapred for export. This sundried Pacamara is one of the most complex examples of Guatemalan coffees we’ve ever experienced.
