This is a very special coffee and produced in tiny volumes due to the complex production technique and thorough cherry selection.  Expect a very unique flavour profile! This is a competition grade scoring coffee and really shouldn't be missed.

Café Granja La Esperanza represents the heart of the Colombian Coffee Culture. The original farm “Potosí” was acquired by Israel Correa and Carmen Rosa Vega in 1930.  Today, Café Granja La Esperanza specialises in the production and pursuit of excellence of specialty coffee varietals. The huge challenges faced by the adaptation of these varietals to the Colombian soil and climate conditions are conquered by adopting innovative techniques.

The Bourbon Noir naturally delivers the distinctive notes found in a rich and complex red wine whilst maintaining the clean taste from a fully washed coffee. In this particular profile the fermentation in cherry is extended to approximately thirty hours at a controlled temperature. Coffee is depulped and left to ferment with the mucilage for about seventy eight hours, then the coffee beans are washed and dried on heldas (sun drier) for a minimum of two hundred hours.

Brewing

ESPRESSO: As an espresso this coffee works equally well drunk black or with milk.  A standard recipe of 19g dose producing a 36g shot in 28-30 secs at 9 bar is an excellent starting point to produce a sweet full bodied espresso shot.

FILTER: If you are going to brew this coffee as a filter, its really best to drink it black to fully appreciate its clean sweet complex flavours.  All brew methods work well but we are really enjoying this brewed with an Aeropress.  17g of coffee and 250g of water and you are good to go!
