Coffee from Carringtons Coffee Co | Natural Process

Carringtons Coffee Co. are a small batch roasters based in Warrington, Cheshire. Founded by Suzy and Alex, they champion single-estate farms, primarily Colombia, where they have a special interest and personal connection. They are both musicians and through a close music school teacher, they visited the family coffee farm in Bogotá, Colombia. It was from this unforgettable trip that gave Carringtons Coffee Co a newfound purpose about developing relationship coffee.

Both Suzy and Alex have a passionate interest in the journey of coffee from origin to the roastery. Coffee traceability is important to them as well as contributing to sustainability and ethical practices in the coffee industry. They also have a great concern for the environment and their packaging is fully recyclable and carbon-neutral.

Cold-brew coffee holds a strong interest and they have developed a special Cold Brew Coffee from the ground up. The unique roast profile - slowly roasted and very light - brings out the natural delicacy and sweetness of their single estate coffee, when brewed using a cold-brew method.

The natural (dry, unwashed) process is one of the oldest methods of producing coffee. It involves drying the whole cherry, in the sun, on tables or in thin layers on patios.

The cherries are raked or turned by hand to prevent mildew during the drying process, which can take up to 4 weeks.

Once the cherries have been dried to the correct amount, the pulp is removed with a hulling machine before the coffee beans are packed.

The coffee from natural processed beans can tend to have more body and complexity with less acidity than with the 'washed' or wet process.
