From Horsham Coffee:

Colombia is well know for producing some of the best washed arabica coffee in the central and south american region. They are the third largest coffee producing country in the world but the largest producer of the arabica varietal.

The coffee comes from a single small hold farm owned by Camilo Villada Enciso. His farm is 4.5 hectares in size and they have been producing coffee on the farm for 25 years. They grown a mix of three varietals, Caturra, Bourbon and Typica. After harvesting the coffee is processed using the washed method and fermented for 36 hrs to remove the mucilage from the fruit. The coffee is then sun dried until the moisture content has reduced to 11%. This  tiny microlot is just 4 x 35kg sacks!

The attention to detail on the farm is very evident when tasting this coffee. It's bright, clean, juicy and very typical of some of the best washed coffees from Colombia. This coffee was sourced by The Green Collection. Founded by John Fratner, a former coffee farmer himself. They are dedicated to supporting and exporting small microlots from the Paez community high in the central Colombian mountains.

Brewing

This coffee works well with all filter brewers and espresso.

For filter we recommend a 1 - 16 brew ratio, and for espresso a 1 - 2.5 brew ratio.
