Our new decaf is from Pitalito in Colombia. Decaf shouldn't be an afterthought and this coffee was selected first for its quality of flavour and more sustainable processing.

This particular lot is the work of a number of smallholder growers from the town of Pitalito within the department of Huila. As with all specialty coffee the cherry is picked and meticulously sorted before depulping and undergoing a classic washed process. As part of a program initiated by Cafe Imports the next step in deca einating is breaking from industry norms (and unnecessary food-miles) in being decaf processed in-country before export. Using local natural sugar cane to create Ethyl Acetate, the coffee is soaked in a E.A solution to remove caffeine.

Colombia has over 600,000 farms, most of them farmed by small landholders with less than 5 acres nestled in the hills at roughly 1,200 to 2,000 meters above sea level. Colombian farmers and citizens alike drink a lot of coffee every day; nearly 20% of their annual production.
