From Clifton Coffee:

The harvest at Pena Blanca takes place between December and March, and the cherries are all hand picked. The coffee is then pulped and 100% of the mucilage is left on the parchment which is dried on patios for 12 days. This black honey process of drying adds a smooth lactic body and complex fruit notes to the cup.
