Domingo Lope is the owner of 8 hectares of land in San Antonio Huista, Huehuetenango. His farm - El Pajal - sits at 1920 masl and is planted with Caturra, Catuai, Bourbon and Pache. Domingo has been preserving his pure Arabica varieties - despite the rise in the use of Catimores in the area - due to the much better cup quality and the fact that his farm management practices mean that coffee leaf rust doesn't affect his plants.

 

The farm is Organic certified and Domingo shows great respect for the environment and the sustainability of coffee production in this area, focusing on producing coffee without inputs and alongside other carefully selected food crops.

Brewing notes

Espresso - To maximise sweetness we recommend as a starting point use 20g of coffee for a 38g shot in around 28-30 seconds. Expect a full-bodied, sweet, and clean espresso. Target extraction level 19.0%.

Filter - For home use, the Kalita Wave provided the perfect balance of body and complexity. As a starting point use a ratio of 32g of ground coffee with 500ml of water at approximately 95degC. Wet the bed of coffee with approximately twice its weight in water, say 60g and use a teaspoon to stir lightly to make sure all the grounds are equally saturated. Add the remaining water in 3 equal measured with all the water added before 2:30 mins. Total brew time should be around 3:00-3:15 minutes.
