Classic blueberry flavours along with raspberry and black grape combine with underlying citrus and hints of anise on the finish. The mouthfeel is delicate, silky and brings just enough syrup like viscosity to enhance the juicy fruit like flavours of the brew

We are delighted to showcase coffees from the ETHIOPIA CUP programme once again. This auction incentivises smallholders by delivering higher than market prices for outstanding traceable boutique quality coffee. These coffees are a unique opportunity to see the potential in Ethiopia and the exquisite flavour profiles possible.

This natural process coffee comes from Tefera Kebede’s farm in the Sidama zone of Southern Ethiopia. His processing is more in the classic natural style common in Ethiopia without any lump pre-drying fermentations taking place. After harvesting the coffees are laid out in a thin layer under protective shade for a controlled and even drying. This helps create a clean, balanced flavour profile where the terroir of the coffee balances perfectly with the process. Any fermentation comes from the drying time itself, naturally extended in the cool climate of highland Sidama.

The cultivar selection in Tefera’s coffee combines both local landraces and selected cultivars. The landrace element is hard to pin down but is likely to contain the varieties often seen in Southern Ethiopian coffee. The selected 74110 and 74112 were developed in the Western zone of Illuababora, known for its rich Arabica genetic diversity, and offer farmers both benefits of disease resistance and classic floral/citrus flavour profiles when brewed.
