From Horsham Coffee Roaster:

This small exclusive microlot comes from a 6 hectare farm owned by Iris Suyapa Alvarado. She inherited a 6 hectare plot of land from her father and planted Catuai and Parainema trees focusing on organic farming methods. Coffee is hand harvested and processed using the washed method on site. Coffee is then dried on raised beds. Iris is also a licensed Q Grader and is the head of the co-operative sample lab. This is a stunning example of a Honduran washed coffee. It is very clean with well balanced juicy fruit notes.

Brewing

This coffee works well with all filter brewers and espresso. For filter we recommend a 1 - 16 brew ratio, and for espresso a 1 - 2.5 brew ratio.
