Coffee from Heart & Graft Coffee Roastery from Honduras
James was working as a Barista when he set up The Coffee Circle in 2012 after becoming exasperated with the lack of speciality coffee in Manchester. Sean soon teamed up with James as his previous role as a buyer and taster with Lincoln and York had set him firmly on the path of coffee love.
As well as searching out and roasting beautiful coffee gems for coffee shops and customers, these guys have a vision of their roastery as a place where people can come and be inspired by the journey coffee takes from field to cup. Regular cupping events, barista throw-downs and training days all contribute to building a fabulous, integrated coffee community.
In August 2018, after running out of space in their previous home as part of a community of creatives in Greengate, the company moved to a spacious and beautiful old workshop in Newton Heath replete with wooden beams. They’ve since built a training room to help their customers understand what Heart & Graft do and thus in turn how to make better coffee for their customers!
As a relatively late comer to the coffee industry, Honduras has become the largest producer of coffee in Central America and now produces some of the highest quality coffee in the Americas.
The location and terroir are perfect for growing coffee which is the country's second biggest export. Over 100,000 families are involved in the production of coffee and with the investment in infrastructure and education into processing techniques from the government the coffee industry is booming.
However the infamous leaf rust hit Honduras fairly hard in 2012 with many crops badly damaged, while the large amounts of rainfall is also quite a big problem when drying the coffee.
Taste profiles of Honduran coffee are fairly similar to Guatemalan coffees in that they offer a wide range of flavours. From the Northern forested region of Agalta producing darker nutty and caramel flavours through to the Montecillos region which is famed for more citric flavours and juicy acidity.

for aeropress: so so clean. Jasmine tea like, peach, sweet and sugary and complex.
for espresso: vanilla, cream soda, sugary lemon. Initially bright but then immediately balances with a sugary body and a long peach and chocolate finish. When drunk through milk, it tastes like lemon meringue pie!
