From Clifton Coffee Roasters:

As the largest producer in the world, Brazil has a long history with coffee. As a country, it typically focuses on commercial production but, in Divinolandia, Sao Paulo things are done a little differently; with small scale, family producers focusing on quality over yield.

These select producers have been paving the way by producing consistently excellent coffee and inspiring other producers in the region of the potential of smaller, quality lots over commodity farming. Manassas is one of these producers.

Production this harvest was 200 bags, which is in line with the average annual production for the farm. Harvest time for the region is generally between June, July and early August but, can shift year to year depending on the rainfall. This lot was picked in late July.

Natural coffees are a bit of a speciality around this part of the region. The terrain can be challenging so there’s no mechanised picking, instead, areas of the farm are picked clean by hand, then pruned as the unripe cherries are separated and the rest are then dried in the sun. Unusually the coffee is dried on tarpaulin; a traditional practice that is rarely seen in the area as most producers have invested in patios to dry their coffees.
