From Lee @ Foundry Coffee Roasters:

This will be the last coffee from Rwanda this season and its the first time that we have bought a natural processed coffee from this country too.

As is usual in this part of the world, growers organise themselves into co-operatives and then share the services of centralised 'wet mills' or washing stations.

Gatare is one of the oldest washing stations in the country and has had a reputation for producing quality coffee for a number of years, frequently finishing highly in the Cup of Excellence Competitions. This coffee is 100% Red Bourbon and has been dried for 5 weeks on raised beds. In your cup you can expect a clean and complex coffee, light yet with a lingering finish. You should find vanilla, figs and plums in there which finished on a lovely rich chocolate note. So, it's unmistakably a natural - but there is a real elegance and great balance here.

For filter or Aeropress we use a 15g dose. For espresso, in our cafe, we use 18g doses in a 18g VST basket. Yield was 36g and the shot was taking around 43 seconds whcih includes a 6 second pre-infusion.
